The olives ascolane PDO

The famous stuffed olives (DOP) owe their name to the city of Ascoli Piceno, the provincial capital city in southern Marche. They are made from salted green olives which are filled with minced meat and then deep fried. The recipe for stuffed olives can be traced back to the nineteenth century. They are a delicacy in the territory of Ascoli and are one of the most representative dishes of the Piceno. They often accompany other fried food, in particular fried cream.
